Winter Wonderland Market

The Winter Wonderland Market menu features roasted chestnuts with cinnamon churros, a variety of sausages including German spicy poultry, pork and sage, USDA beef pattie, chicken and smoked onion pattie, and a vegan pattie, all served with mini buns, crispy onions, mustard selection, and cheese fondue. 

There’s smoked turkey with caramelized onions, berries, and honey in warm bagels, slow-roasted salted beef with horseradish mayo in focaccia pockets, and a dessert station with gingerbread cookies, waffles, fruit compotes, ice cream, and crepes. 

Cold items include dill marinated salmon on rye bread, grilled tofu tartlets, chestnut and smoked duck scones, chickpea hummus cones, and pesto marinated mussels. 

Hot items include goose and truffle turnovers, spicy lamb pitta pockets, crab arancini, fried halloumi with orange mayo, and stuffed mushrooms. Desserts feature mince pies, Christmas pudding, coconut brownies, pistachio éclairs, torrone, and fruit kebabs.

The menu includes spicy scones with duck and sumac mayo, smoked salmon banquettes with cucumber and caviar, ricotta croûtes with honey and figs, pumpkin and red lentil cakes with aubergine pâté, smoked turkey cones with cranberry and lavender glaze, prawn tartlets with lemon gel, and peppered cheese crostini. 

Flying bowls feature scallop and prawn ravioli in lobster bisque, and spinach risotto. Hot items include mini rabbit pies, pork and apricot dumplings, sweet corn and tofu with tortilla chips, vegetable spring rolls, pigeon turnovers, blue cheese stuffed mushrooms, and spicy beef rice fritters. 

Desserts include mince pies, Christmas pudding, coconut brownies, éclairs, torrone, and fruit kebabs.

This festive menu features a variety of cold items like smoked eel with wasabi cream, goose liver parfait on brioche, and smoked salmon with black caviar. 

Flying bowls include octopus tagine and mushroom tortellini, while hot items range from filo prawns and chicken tikka masala puffs to Thai fish cakes and vegetable spring rolls. 

Desserts offer a seasonal selection of mini Christmas logs, mince pies, chocolate tartufo, panforte, fruit kebabs, and assorted ice creams. Perfect for a festive celebration with a blend of flavours and textures.

SPECIALTY DISPLAYS​

These optional add-ons provide a wide variety of themed food stations to enhance your event. The Sliders and Sausage Stall offers a selection of meats and vegan patties served with a choice of buns, crispy onions, mustards, and cheese fondue. 

The Christmas Smoked Turkey Bagel Stall features smoked turkey with caramelized onions and festive sauces, while the Salted Beef Station serves slow-roasted beef with horseradish mayo and focaccia. For dessert, enjoy gingerbread cookies, waffles, crepes, and ice cream. 

Additional options include the Christmas Turkey Carving Station, a Sushi and Sashimi Table, a Mediterranean Pasta Table with live and baked pasta selections, a Cheese Bottega offering a variety of cheeses, an Asian Station with stir-fried dishes and crispy favorites, and an American Street Food Stall with pork ribs, wings, mini burgers, and more.

Festive Flavours
Our Festive Flavours Buffet Menu offers a delightful selection of Italian and international antipasti, soups, pasta, and main courses. Savour dishes such as prawn and basil bisque, traditional stuffed turkey, wild mushroom ravioli, and a variety of vegetarian and vegan options. 
 
The meal concludes with a tempting assortment of desserts, including gateaux, tarts, and festive treats. Available for dinner on select dates in December with no guest restrictions on those evenings.

The Yuletide Fest Buffet Menu presents a festive spread with a variety of Italian and international antipasti, including sushi, sashimi, terrines, and Italian cold cuts. Pasta dishes range from orecchiette with mussels to spicy beef lasagne, while the carving station features honey-glazed pork and traditional stuffed turkey. 

Other highlights include grilled sea bream, beef medallions, and a selection of vegetarian and vegan options such as risotto and stir-fried vegetables. To finish, enjoy a tempting array of desserts, from tarts and mousses to festive treats and mince pies.

The Nutcracker's Feast

This menu begins with a ham hock terrine accompanied by mushroom and port jelly, chutney, and a lentil and chilli dressing. For the main course, choose between oven-baked red snapper, braised pork belly and cheeks, or a red quinoa and root vegetable stew with grilled tofu. 

Dessert is a classic Christmas pudding served with crème anglaise and cinnamon-orange ice cream, followed by coffee or tea with petit fours.

This menu starts with beef carpaccio and burrata, served with rocket, Parmesan, and aged balsamic vinegar. For the main course, options include pan-fried amberjack fillet with smoked garlic risotto, slow-roasted beef medallions with Yorkshire pudding and onion gravy, or a cauliflower steak with lentils, pomegranate, and sumac potatoes.

Dessert features a rich chocolate and dark rum mousse, accompanied by a warm mince pie and mulled wine ice cream, followed by coffee or tea with petit fours.

DRINKS PACKAGES

Raise a toast to the season with our expertly crafted festive drinks packages, perfect for adding a sparkle to your festive celebrations.
Open Bar
The open bar menu offers three tiers of packages: Silver, Gold, and Platinum. 
 
The Silver package includes international wines, local and foreign beers, soft drinks, water, and juices. 
 
The Gold package adds a selection of international spirits along with wines, beers, mixers, and soft drinks. 
 
The Platinum package includes superior international spirits, wines, beers, mixers, and soft drinks, along with two alcoholic cocktails and one non-alcoholic cocktail. 
 
Each package is available for varying durations, providing flexibility for your event.

The Full Cocktail Bar offers a personalised selection, allowing you to choose four cocktails, such as Piña Colada, Mojito, and Aperol Spritz, along with two mocktails like the Corinthia Special and Virgin Mojito. 

For mocktail-only parties, the Virgin Cocktail Bar features refreshing options like Coco Colada and Virgin Mojito. 

Gin lovers can enjoy The Gin Bar, with selections such as Tanqueray and Hendricks, paired with premium tonics and garnishes. 

The Whisky Bar provides premium choices like Talisker and Glenfiddich 12-Year-Old, while The Wine Bar presents an array of Maltese, Italian, French, and New World wines. 

All bars are available with flexible time packages and can be upgraded with any open bar option for a seamless addition to your event.

The local wine beverage package offers half a bottle of local 1919 wine, half a bottle of water, and coffee, with an option for free-flowing service for up to four hours. 

The local premium wine package includes half a bottle of premium local wine, such as Isis or Melqart, water, and coffee, with a similar free-flowing option.

The international wine package provides half a bottle of international wine, water, and coffee, with the choice of free-flowing service. 

You can upgrade any beverage package with options like a glass of Prosecco, Champagne, or a cocktail, and corkage fees apply for events with 150 or more guests.

The non-alcoholic package includes two glasses of soft drinks or juices, half a bottle of local water, and coffee, ideal for serving with a sit-down meal. For longer events, the free-flowing non-alcoholic package offers unlimited soft drinks, juices, local water, and coffee, available for up to four hours.
