We are looking for a Chef de Partie – Artisan Foods to join our kitchen brigade and play a hands-on role in preparing, preserving, and producing traditional Maltese recipes and artisan food products, using time-honoured techniques and seasonal local ingredients.

This is a practical, production-focused role for someone who feels at home in the kitchen, values authenticity, and takes pride in doing things properly, from batch cooking and pantry production to safeguarding flavour, consistency, and heritage.

Responsibilities:

  • Preparing and producing traditional Maltese dishes, preserves, sauces, baked goods, and pantry items
  • Working with local, seasonal ingredients and established preparation methods
  • Executing batch production with consistency, care, and attention to detail
  • Supporting the development of seasonal pantry items and artisan food outputs
  • Collaborating closely with senior chefs while remaining rooted in day-to-day kitchen execution
  • Upholding the integrity of Maltese culinary traditions within a professional hotel environment
  • Maintaining high standards of food safety, hygiene, and HACCP compliance at all times

Requirements:

  • Previous experience as a chef in a professional, large-scale kitchen (hotel, resort, or high-volume operation)
  • Strong understanding of Maltese food culture, seasonality, and traditional techniques
  • A genuine respect for heritage, craftsmanship, and local produce
  • A calm, methodical approach and pride in consistency and quality
  • Someone grounded, credible, and comfortable working closely with local producers and culinary collaborators

(An understanding of Maltese culinary traditions and local food culture will be considered a strong asset.)
